Old bush vine grapes are vinified in Palmento, qvevri and wood, then matured in large chestnut & oak barrels. Alcoholic fermentation was spontaneous, no additives used in the vinification process. A small quantity of SO2 was added prior to bottling to ensure the wine’s stability and ease to be poured by the glass. No fining or filtration.
Anna has been involved in making wine for over thirty years. Originally from Adelaide, South Australia, she is formally trained as an oenologist. However, a chance meeting with her now husband, Eric Narioo (Managing Director of the UK's top natural wine importer, Les Caves de Pyrene in 2004, set her on a different path from making Super Tuscans.
The fascination and relatively unknown terraces of Mt Etna caught their attention and in 2008, their first wine “Vino di Anna Rosso” was made.
The soils of their home base are black, decomposed lava (volcanic), except around Linguaglossa, where they are bright red and full of iron. The mineral content is very high giving the wines a noticeable sapidity.
