TASTING NOTES

Yellow fruit, plums and peach, and a gentle and polished palate with soft acidity and a bitter twist in the finish.

Pre-fermentative oxidation. Not controlled-temperature fermentation. Fermented and aged in stainless steel with its lees, but no stirring, for nine months.

Juan Jesús, who is a 4th generation winemaker, founded Viñátigo in 1990 and has worked tirelessly since then identifying, recuperating the native grapes of the Canary Islands. The grape Listán Blanco de Canarias was brought to the Canary Islands in the 18th century by the Andalusian conquers. Viñátigo cultivates it in the high-lands that sit at 500 meters of altitude.

Traditional vineyards cultivated in trellis, a viticultural system imported by the Portuguese colonizing influence in the area. The Icod valley was buried by various geologically recent volcanic eruptions that generated a very stony and sandy terroir, where the roots of the vines have the capacity to easily penetrate deep, giving its wines tension, acidity and freshness. The Paraje de La Peña, at about 450 meters above sea level, is directly influenced by the trade winds.
