Sand and gravel soils. Harvested in a week at the end of September, the grapes were placed in a fiberglass tank for 21 days of maceration. Alcoholic fermentation lasted for 10 days. No punch-downs, 3 pump-overs. The wine is aged for 6 months in fiberglass tanks.
Established in the Chinon appellation, in Cravant les Coteaux in 2021 with 5 hectares of old vines, former train driver Nicolas Gonnin wanted to get back to the land and produce something good and full of value.
After a quick training course at the Bouche du Roi estate in the Yvelines, Nicolas works alone, from vineyard work to vinification, packaging to administration and marketing!
