Ana and Iván of Bodegas Gratias are on a mission to protect old vineyards of Bobal and other local varieties (like this Tardana), championing the vinous heritage of the area. They firmly believe in Manchuela as a region capable of producing exciting and relevant wines that draw on the best of tradition and indigenous varieties. Organic, fermented with natural occurring yeasts and using only minute sulfur additions, if any.
The Tardana fruit comes from unirrigated bush vines at 400m altitude on high chalk content soils. This native grape variety is so adapted to the terroir that it ripens very late, in October, after the reds.
Fermented in stainless steel tank. One third of the wine finishes the fermentation inside a tinaja. The wine is left to age for 3 months on its lees before bottling.
