Paltrinieri is one of the masters of Lambrusco producing wines that are a little more nuanced and subtle than the norm with a sense of minerality providing a tautness to the mouthful.
The Paltrinieri family has been making wines in the Sorbara area since the early 1900s and has contributed greatly to the qualitative growth of the area's wines, with labels that express the best qualities of this ancient native vine.
Grown on loose soil, quite rich in organic matter, fermentation takes place in temperature-controlled stainless steel tanks, with classic maceration on the skins. The wine is then transferred to an autoclave, where re-fermentation takes place according to the Martinotti or Charmat Method.
The Sorbara grape is the thinnest skinned of the Lambrusco grape varieties typically providing rosé wines with a more savoury and elegant fruit profile. The fruit is a little more nuanced and subtle in this wine with a sense of minerality providing a taut mouthful.
Hand harvested and fermented in stainless steel tanks with native yeasts, with maceration on the skins for three days.
