From organically farmed Trebbiano planted on yellow clay and limestone soils. Hand harvested the first week of September, the grapes undergo spontaneous fermentation in temperature controlled stainless steel tanks with a small amount of skins to add texture. The wine then matures for 6 months on lees in the tanks and an additional 4 months in bottle prior to release.
In 2010, Marco Cirese, grandson of Noelia Ricci, began working on a project to create a winery-within-a-winery. He identified the best 7 hectares of parent-winery, Pandolfa. These vineyards are located at a higher elevation (250m) with calcium-clay rich soils.
Noelia Ricci is a small ‘cru’. The vineyards are environmentally managed with full organic conversion being completed in 2021. Just 3 wines are produced.
