Naboso winery is not your typical winery. It's owned and operated by Nadja, Andrej, and Ryba - yes, Ryba, the vineyard terrier. Nadja, originally from Germany, fell in love with wine a while ago and started making it as a hobby. She worked in an incredible wine bar in Copenhagen where she met her partner, Andrej, who had been making wine under the radar for over a decade. They fell in love with each other and the idea of building a winery together in Sväty Jur, Slovakia, and so the journey of Naboso began.
They have around 5 ha of vineyards just outside of the town, all lying on a bedrock of granite with rich, sandy soils, and all vineyards facing south to south-east.
All their work in the cellar is done by gravity, and the only additive they use is sulphur, as low as possible and just when they think the wine needs it.
