TASTING NOTES

The Caslot family have been farming their domaine of thirty-three hectares since 1640 from their farmhouse which sits on the hill overlooking the vines in the heart of the superb terroir of Restigné. Today Pierre’s son Emmanuel and daughter Stéphanie are in charge. These dynamic siblings have been instrumental in upgrading the winery equipment and converting the domaine to organic farming.

Manual harvested, controlled ferment with indigenous yeast. No filtration. Tiny amounts of S02 added at bottling.
