When it comes to wine tasting COL FONDO is a pure expression of its territory: Hints of straw with flowers, yellow fruit and bread crust and a deep mineral sense in the palate. We recommend gently turning the bottle upside-down 2-3 times before uncorking.

This Asolo Prosecco DOCG ‘Col Fondo’ (with sediment) was born from the desire to rediscover Papà Emilio’s old technique in the production of Prosecco. From the selection of the grapes from Case Paolin’s oldest vineyard and the maceration on skins for 18 hours, comes a base wine with lively character, a strong personality and distinctive minerality. Second fermentation is in bottle in accordance with the traditional method but without disgorgement. The presence of yeast in the bottom of the bottle is indicative of genuineness.
And with zero dosage, this is bone dry.
