Prior to taking over his family's farm in 1981, Nicola Manferrari had been working in his family's pharmacy. He found his calling after his father's unexpected passing, when he was put in charge of his father’s ‘hobby’ – five hectares of land, only three of which were planted with vines. Since then, Borgo del Tiglio and Nicola's legend have grown. Nicola is now regarded as one of Italy's great winemakers and a pioneer in Friuli, along with contemporaries like Gravner, Jermann and Schiopetto.
Using principles he learned from studying Champagne production - he exerts increasing pressure gradually when pressing the grapes to produce less solid and extract little potassium, in order to ensure a good level of minerality in the wine.
Alcoholic fermentation begins in stainless steel tanks and as soon as it starts, the must is transferred into oak barrels, where it will stay throughout the fermentation process. The white wines remain in barrel for 10 months and are bottled before the next harvest. Nicola sources all of his barrels from France and he uses exclusively 250 liter barrels. The percentage of new barrels on the white wines is small.
