With botrytis aromas of saffron and dried ginger - this wine exudes a Jura-esque vibe with curry leaf & marzipan cookie, brightened by lemonade and precise acidity. The palate is dry and fresh, and the lemon fruit and peel shines through.

Ambient fermentation for 5 months in a 2000L concrete tank, aged for an additional 4 months at 15°C and 2 months at 7°C to allow the wine to settle.
Big Head is a reference point for innovation and stylish winemaking in the Niagara region. The RAW label wines are all concrete fermented and aged, with absolutely no oak. They are wild fermented, whole cluster pressed and unfiltered.
