Pairs perfectly with classic tapas but can also last the whole meal through with seafood and even sushi. This wine is meant to be served well chilled. The finesse of this wine comes from the fact that Hidalgo uses finos from aged soleras, sometimes 6 and 7 years old, when many producers choose to bottle their finos at 2-3 years. This extra aging adds refinement on the palate.
Bodegas Emilio Hidalgo in Jerez (not to be confused with Bodega Hidalgo-La Gitana from Sanlucar) was founded in 1874 and has developed a reputation for producing elegant, refined sherries. Located in the historical heart of Jerez de la Frontera, the winery is housed in a late 19th-century building of classic sherry-bodega construction: thick walls, high ceilings and tiled roof, ideal for the ageing of Sherry.
Today, the fifth generation of Hidalgos runs the bodega, carrying on the family’s rich sherry-making heritage. The new generation maintains the traditions that have been carefully preserved and enriched for more than 145 years. Bodegas Emilio Hidalgo continues to be recognized as one of the top producers in Jerez, recognized for its high quality and distinct style.
