Since 1999 Stefan Steinmetz has taken the responsibility to bring modern production techniques and newly-acquired knowledge to the tradition of the winey.
In addition to the Brauneberger Juffer location, the grapes are grown in other traditional sites such as Kester Paulinshofberg, Piersporter Goldtröpfen, Wintricher Geierslay and Oligberg, Mühlheimer Sonnenlay, Veldenzer Grafshafter Sonnenberg, as well as Dhroner Hofburg, where they make the best Riesling and Pinot Noir.
The meticulous work start with the careful selection of the best grapes and their gentle without mechanical pressure. In the winery and in the cellar there is an attentive consideration of location of the vineyards, the soil as well as the climate influences in order to achieve the best quality.
The production methods are mostly organic. In the cellar there is no use of yeasts and accelerators, acidic additives or de-acidifiers or animal proteins.
